1. Vanilla Cupcake

Here are a few things that I use to make these cupcakes that I can’t live without.

  • Measure your flour correctly! Adding too much flour to the recipe is the most common mistake. The best, and easiest way to measure flour is by using a scale. If you don’t have one then fluff your flour with a spoon, sprinkle it into your measuring cup, and use a knife to level it off.
  • A bit of advice on the ingredients. You can get the cheapest flour, sour cream, milk and even butter but you have to get good vanilla for this recipe! It’s the main flavor and you want it to shine so go find a good real vanilla extract and it you want to get points for being fancy use some vanilla bean paste too while you’re at it. People love seeing the little specks of vanilla in the cupcakes.
  • Feel free to modify this recipe! I especially love these cupcakes with a dollop of Italian meringue buttercream on top as it’s less sweet and lighter (Tasting not calories) than American buttercream.
  • You can definitely add sprinkles to this, 1/3 of a cup should do, to make this an amazing funfetti cupcake!
  • Baking papers come in different sizes and everyone’s oven is slightly different. I like to turn my pan halfway through baking and toward the end of the baking time I keep a close eye on the oven.
  • Once the centers are springy and a toothpick comes out clean the cupcakes are ready. Being watchful at the end lessens the chances of having caramelized dark edges on your cupcake, ensuring it’s light, soft, and moist! Now you can easily try these recipes at home during lockdown.

 2.Mug Pizza

1.In a small microwavable mug, add the flour, baking powder, baking soda and salt. Mix the dry ingredients together.
2.Then add in the milk and oil and mix again until well combined.

3.Add a tablespoon of the pizza sauce and spread it around the surface of the batter.

4.Add in the cheese, pepper, olives and sprinkle with oregano. (here you can use any toppings of your choice)

5.Microwave for 1 minute or until it rises up and the toppings are bubbling. (here I’ve used a 1200w microwave, the
timing may vary if yours is different. If the microwave you have is less than 1200w, it may take you up to 1.5 minutes to make the pizza).

6.Take the pizza out of the microwave oven and enjoy your hot pizza.

3.Roti Taco Bowl

To begin making the Spicy Whole Wheat Roti Taco Bowls Recipe, first preheat the oven to 200 C.

Lightly brush the rotis with butter or olive oil on both sides.

Nest the rotis in oven friendly bowls like a muffin pan or large ramekins. If you feel that the rotis are falling in, place a ball of foil or some baking beans to keep the sides erect.

Bake the rotis in the oven for 12-15 minutes till the rotis are crisp and browned.

4.Pancake

Ingredients

four cups flour, sifted

4 tablespoons baking powder

four cups milk, warm to the touch

¾ cup butter, melted

3 egg yolks

4 egg whites

Instructions for recipe:

  1. Whisk together the flour and baking powder in a large bowl.
  2. In a separate bowl, add the butter, milk, and egg yolks, stirring to combine.
  3. In a third bowl, use a hand mixer to beat the egg whites until soft peaks form.
  4. Pour the milk mixture into the flour mixture and stir with rubber spatula until just combined. Add the beaten egg whites and gently fold to combine.
  5. Heat an 8-inch nonstick skillet over low heat. Pour 1 ½ cups of pancake batter into the skillet, smooth out the top, then cover with a lid. Cook until golden brown on the bottom and a toothpick inserted into the center comes out clean, about 20 minutes. Transfer the pancake to a plate and repeat, making 3 more pancakes with the remaining batter.
  6. Serve with maple syrup.
